Lost Spirits Distillery’s new restaurant in Las Vegas is inspired by – and named after—Jules Verne’s epic novel, “20,000 Leagues Under the Sea.”

With a launch date of March 12, the new 20,000 Leagues Under the Sea restaurant will serve up 16-course dinners in a setting inspired by Verne’s novel, reimagined as a fully immersive dining locale.
The kitchen and dining room for this novel venue are both located in Lost Spirits Distillery’s tasting rooms within the Area15 entertainment district, just off the Las Vegas Strip.
It’s an intimate and exclusive experience, seating just 12 people weekly, with each meal personally prepared by Chef Taylor Persh, who cut her culinary teeth at The Blue Palm Restaurant in L.A., co-owned by James Beard-award winning chefs, Jon Shook and Vinny Dotolo, when she was just 14 years old. She later worked at Jose Andres’ restaurant, Bazaar.
“As a chef who eats, drinks, and sleeps fine dining, the hardest part of creating a new restaurant is imagining what I’m going to do that hasn’t been done before,” said Chef Persh. “I’m delighted that, in all my research, I have never seen anything quite like this experience, outside of our former restaurant, Fish or Flesh, in Los Angeles.”
Persh also acted as chef at Fish or Flesh, which was themed as a military encampment a la “Island of Dr. Moreau” by author H.G. Wells.
20,000 Leagues Under the Sea’s dining room décor is inspired by illusionist and movie director Georges Méliès, famous for his film, “A Trip to the Moon,” and the menu is equally eclectic, featuring dishes such as uni crème brûlée and nori bonbons.
“It is an honor and a pleasure to announce this very special space,” said Lost Spirits creator & CEO, Bryan Davis. “Immersive dining experiences, at this level, are so few and far between that we are delighted to add one to the growing number of options in Las Vegas.”
Reservations for the fine-dining restaurant’s 16-course tasting menu are $240 per person, and include Lost Spirits show tickets, plus “strong drinks and cocktails.”
